How to store Once the jar is open, the olives should be refrigerated. The best way to store them is in fresh (unsalted) water.
How it is made The “Bella di Cerignola” variety, thanks to its attractive shape and size once ripe, makes this olive stand out from the local olive types. This variety is characterised by its ability to withstand the various processes of harvesting, preserving and transportation.
A brief history According to several authors, the original tree stump from which “Bella di Cerignola” olive variety was first grown, comes from the Roman “Orchites” olive. Others claim that it was imported from Spain in around 1442, during the Aragonese period, and it is for this reason that the name is traditionally associated with “di Spagna”, and was widespread across the Tavoliere area, including Cerignola, Ortanova, Trinitapoli, San Ferdinando and so on. Yet this variety does not feature amongst those native to the Iberian peninsula, and it would therefore appear to derive from the area previously noted.
